ROASTED BUTTERNUT SQUASH WITH SPICY QUINOA TABBOULEH



Alltså rostad butternut pumpa är så otroligt gott! Dessutom är det ju verkligen säsong nu. Älskar att kombinera det med en kryddig quinoa tabbouleh.

Roasted butternut squash is soo good! And it's also in season now. Love to combine it with a spicy quinoa tabbouleh.

ROASTED BUTTERNUT SQUASH WITH QUINOA TABBOULEH
Serves 2

1/2 butternut squash
1 tbsp oil
1 tbs vinegar
salt

1 1/2 dl quinoa
1 ml cinnamon
1 ml smoked paprica
1 ml cumin
salt
1 tbsp olive oil
1 garlic clove, grated

1/2 pomegranate
parsley
roasted pumpkin seeds
1/2 lemon


  1. Heat the owen to 200 °C. Cut the butternut squash into slices. Mix the oil, vinegar and salt and mix it with the butternut slices. Put them on a baking sheet and then into the owen for about 20 minutes.
  2. Bring 3 dl of water to boil in a saucepan and then add the quinoa, cinnamon, smoked paprica, cumin and salt. Boil until the water is gone and quinoa is done. Mix garlic and olive oil with a fork in bowl. Add the guinoa and mix. Add chopped parsley and pomegranate seeds and drizzle some lemon juice over it. 
  3. Heat up a dry frying pan and roast the pumpkin seeds until they start "popping". 
  4. Serve the quinoa tabbouleh with roasted butternut squash and topp it with the roasted pumpkin seeds and some lemon slices on the side.
